Farm fresh tomatoes and green beans. My wife is very fond of shopping at farmers markets on weekends and I usually tag along. I always look for interesting compositions of fruits and veggies on display. I was attracted to this display by the red-green color contrast.

Tomatoes contain all four major carotenoids, namely alpha- and beta-carotene, lutein, and lycopene. These carotenoids may have individual benefits, but also have synergy as a group (that is, they interact to provide health benefits). In particular, tomatoes contain awesome amounts of lycopene, thought to have the highest antioxidant activity of all the carotenoids. They work synergetically with broccoli and may help reduce the risk of prostate cancer. A diet rich in tomato-based products may help reduce the risk of pancreatic cancer. Tomatoes contain the antioxidants beta-carotene (vitamin A activity in the body), vitamin E, and vitamin C. They are rich in potassium, a mineral most of us don't get enough of. When tomatoes are eaten along with healthier fats, like avocado or olive oil, the body's absorption of the carotenoid phytochemicals in tomatoes can increase by two to 15 times, according to one study.
Green (string) beans are very low in calories and contain no saturated fat. Nevertheless, the lean vegetables are a very good source of vitamins, minerals, and plant derived micronutrients. They are very rich source of dietary fiber which acts as a bulk laxative that helps to protect the mucous membrane of the colon by decreasing its exposure time to toxic substances as well as by binding to cancer-causing chemicals in the colon. They have high levels of vitamin A, and health promoting flavonoid polyphenolic antioxidants such as lutein, zea-xanthin and beta-carotene. These compounds help act as protective scavengers against oxygen-derived free radicals and reactive oxygen species that play a role in aging and various disease processes. They also contain vitamin B6, vitamin B 1, and vitamin C.
